Executive Chef

About the Job

The ideal candidate must have a passion for creating good food and have a substantial background in South Louisiana Cooking. Must have a minimum of 5 years experience in kithchen managment and must be able to discipline and motivate culinary support staff. Additionally, the candidate must not be timid and must effectively and efficiently mold personnel to acheive greatness or eliminate them through proper procedures and paper trail to reduce burden. The chef must have the willingness to work any station if need be as a result of sending someone home for disciplinary reasons. If you are looking for a desk job, this one is not for you. The chef must be able to accept constructive criticism relayed to them by customers via front of house management or by management alone. The Chef must share the vision of the restaurant theme and direction with owners and General Manager when implementing menu items. It is understood that the Chef is ulitimatey responsible for any food item that comes out of the kitchen. Consequently the chef is to monitor food items daily to make sure that they are being created according to established recipes and that culinary team is held accountable for the proper production of such recipes. Currently, the General Manager is micro managing food cost and has been successful in bringing it below 30%. Ultimatley,the Executive Chef will have to take over this role and maintain or improve performance through proper costing, inventory and menu design. The Executive Chef and General Manager will be jointly responsible for menu creation, pricing and implementation. Finally, the Chef is considered a key figure of the Restaurant PR team. The chef will be expected to do cooking demonstrations, appear on television or news programs set up throuth the advertising firm, and to actively take part in promotional advertising.
