FOOD AND NUTRITION SERVICES MANAGER

The Riverside County Regional Medical Center (RCRMC) has an outstanding opportunity available now for a Food and Nutrition Services Manager. This position is responsible for the overall management of the hospital food and nutrition services, including medical nutrition therapy for patients, food preparation and storage, hospital cafeteria services and catering. The Food and Nutrition Services Manager position reports to an Assistant Hospital Administrator.

RCRMC is located in Moreno Valley, California and the newest hospital facility in rapidly growing Riverside County. With over 115 years of service to the community, our 439- bed acute care and teaching facility is the number one level II trauma, multi-specialty, acute care hospital in the County.

Examples Of Duties:

  • Plans, organizes, and directs through subordinate supervisors the work of cooks, and other food services personnel engaged in the procurement, storage, preparation, and serving of food for patients, employee cafeteria, coffee shop, and catering for special activities.

  • Directs through subordinate supervisor the administration of the hospital food and nutrition program services; confers with clinical dietitians; food production, and food preparation and food service supervisory personnel in regard to the planning of general and special menus.

  • Prepares budget estimates and justifications for the food and nutrition services program and maintains cost controls; plans and directs the ordering, receiving, and accounting of all food products, supplies, and equipment for food and nutrition services operation.

  • Coordinates with Purchasing Department on new and different food products, enteral and parental nutrition products, supplies and equipment, making changes in commodities, brands, sizes, and specifications as needed.

  • Prepares and maintains records, reports, and statements concerning operations of clinical and non-clinical nutrition services program.

  • Confers with Assistant Hospital Administrator regarding policies of food and nutrition services program as they relate to Hospital policy, recommending changes and improvements as needed.

  • Reviews and evaluates existing operational methods and procedures of food and nutrition services program for effectiveness and efficiency, initiating changes as necessary to ensure compliance with federal, State, and County laws, rules, and regulations, and the rules and procedures of hospital accrediting bodies.

  • Interviews, selects, and evaluates subordinate employees.

  • Develops and implements a quality assurance program; plans and directs an in-service education and training program for food service and clinical nutrition staff.

    Typical Qualifications:

    Candidates must have:
    Certification: Current and valid Registered Dietitian certification issued by the American Dietetic Association. Advance certifications such as CNSD or CDE or CCS paneled Registered Dietitian preferred.

    Experience
    Option 1: Three years as a Dietitian in an acute care facility, including one year as a Supervising Dietitian or an equivalent supervisory position.
    Option 2: Three years of administrative, managerial, or supervisory experience in a food services unit of an acute care hospital or health care agency which involved budget preparation and control, procurement of food supplies, and volume food preparation for a variety of dietary needs.

    Knowledge of: Budgetary, personnel, and food services management; the concepts of nutrition; the principles, methods, techniques, and equipment used in preparing, cooking, and serving large quantities of food in institutional or hospital kitchens; the practices used in the procurement, storage, and inventorying of large quantities of food; sanitation and safety regulations and practices; the principles and methods of menu planning.

    Ability to: Plan, direct, coordinate, and supervise the work of others; analyze food service management and personnel problems, evaluate alternatives, and devise workable solutions; prepare budget requests including cost, food, and material estimates; develop creative planning strategies to enhance services and maximize cash flow; prepare and maintain records and written reports relating to food services operations; read, comprehend, interpret, and apply laws, rules, regulations, policies, and procedures affecting a food services unit in a hospital; establish and maintain effective working relationships.
