About the Job








Individual selected will work with Hotel Duval Food & Beverage Director to establish Level 8 Lounge as the pre-eminent ultra-lounge environment in Tallahassee through thorough and proactive planning, organization and facilitation of the daily activities of the associates and the operation.

ESSENTIAL FUNCTIONS:
* Select, train, evaluate, lead, motivate, coach, and discipline all associates in Level 8 Lounge to ensure that established cultural and core standards are met. Responsible for long range strategic and concept planning for outlet operation.


* The ability to be visible in the operation, provide recognition, promote good public relations, handle complaints, concerns or special requests for guests, clients, and group contacts.


* Provide expert knowledge of wine and spirits and ensure quality of all food or beverage items, ingredients, and preparation methods; in an elegantly appointed environment dedicated to an attentive and distinctive experience while following and maintaining all local, state, and federal laws relating to alcohol service and consumption.


* The ability to work closely with the Director of Food and Beverage, Executive Chef and  Kitchen Staff to design an effective menu and beverage list while ensuring excellent product quality at a fair price.


* Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, inventory, and cash control.


* Attend regular operational meetings to ensure effective coordination and cooperation between departments.


* Inspect physical condition of facilities and equipment on a daily basis in the outlet and make recommendations for enhancements and improvements as needed.


* Work harmoniously and professionally with co-workers and supervisors.

ADDITIONAL FUNCTIONS:
* Assist with the service and preparation of beverages and food to guests.
* Assist in greeting of guests and patrons to foster upscale experience.
* Assist with the cleaning of operational areas.
* Assist with all other food and beverage departments as needed.


Job Requirements:


College Degree preferably specializing in hotel/restaurant management or equivalent experience is required.


Previous high end/upscale lounge management experience preferably in a first tier market.


Working knowledge of hotel operations, food and beverage service, wine/spirits/cocktails, cost control, labor control, sanitation, maintenance, merchandising and accounting.


Prior experience on Aloha POS system a plus.
