Spuntino Wine Bar and Italian Tapas is Doherty's own concept. The tapas -style menu allows guests to have a one-of-a-kind experience tasting different menu items each visit. The extensive wine list features several Italian wines by the glass, hand-picked by the Doherty family and executive team, as well as fine wines by the bottle. Spuntino translates to "an informal meal; snacks" - perfect for the smaller tapas portions.
The duties of a sous chef may include the following tasks:
· Food preparation
· Managing employees
· Overseeing customer relations
· Directs activities and performance of associates on a shift by shift
· Follows standardized recipes and specifications while consistently adhering to company preparation and portioning procedures.
· The ability to identify and build pars to sales demands.
· Assists the MOD with line checks.
· Demonstrates an awareness and concern for all controllable budget categories
Management and Development of Associates
Hire, train, motivate, coach and counsel employee’s to ensure unit is staffed to the needs of the business.
Empower employees in order to build self-sufficiency within the team.
Maintains a trained staff through effective use of employment orientation, individual training sessions, and staff meetings.
Must have 2+ years of assistant sous chef or kitchen management experience in a full service, moderate to high volume restaurant.
Solid track record of success in previous assignments demonstrating upward career tracking
Strong communication skills
Strong leadership skills
Culinary school background a plus
Ability to speak and understand Spanish a plus
Able to work ten hour-plus shifts plus ability to stand, sit or walk for extended periods of time
Able to grasp, lift and/or carry up to 50 lbs as needed
Finger/hand dexterity to operate kitchen machinery, knives, etc
Able to withstand changes in temperature, occasional smoke, steam and heat and work in a confined area
Must possess hearing, visual and sensory abilities to observe and detect emergency situations; also to distinguish product, taste, texture, temperature and presentation and preparation
